The Regional Food & Beverage Operations Manager acts as a strategic partner to the Regional Director for Scotland providing operational expertise, commercial insight, and venue support to drive the performance of the F&B offering across Grosvenor Casinos venues in the region.

This role focuses on enhancing customer experience, optimising profitability, and ensuring operational excellence across all F&B operations.

The ideal candidate will be a dynamic, customer-focused professional with a strong background in multi-site hospitality operations with a demonstratable, proven ability to influence and collaborate with operational teams. A team player and ultimately someone with a passion for hospitality who can implement change whilst bringing a team along with them.


In this role, you will:

Strive to achieve Operational Excellence:

  • Partner with the Regional Director and casino management teams to ensure the delivery of high-quality F&B services across the region’s casinos.  
  • Manage your region delivering exceptional operational standards, quality food and beverage and service levels always identifying areas for improvement and helping share best practice across your region and beyond.
  • Support the implementation of F&B policies, procedures, and standards to ensure consistency and compliance across the region.  

Enhance Commercial Performance:

  • Analyse F&B performance metrics (e.g., revenue, margins, waste, and customer satisfaction) to identify trends, risks, and opportunities.  
  • Work with casino managers to develop and execute strategies to drive F&B revenue growth and improve profitability.  
  • Support the development and launch of new F&B products, menus, and promotions to enhance customer engagement and satisfaction.  

Deliver a Customer Experience that exceeds expectations: 

  • Monitor and evaluate customer feedback with the casino management teams to identify areas for improvement in the F&B offering.  
  • Collaborate with operational teams to ensure a seamless and memorable customer experience across all F&B touchpoints.  
  • Champion initiatives to enhance service quality, menu innovation, and overall customer satisfaction.  

Achieve consistency through strong Training & Development:

    Achieve consistency through strong Training & Development:Support the training and development of F&B venue teams to ensure the highest standards of service and operational efficiency.  

    • Share best practices and provide coaching to casino managers and F&B staff to drive continuous improvement.  

    Enhance Stakeholder Engagement:

    • Build strong relationships with casino managers, F&B teams, and central support functions to foster collaboration and national/regional alignment.  
    • Act as the key point of contact for F&B-related queries and initiatives within the region.  
    • Communicate effectively with stakeholders at all levels to ensure the successful delivery of F&B objectives.  

    Required Key Skills & Competencies:  

    • Strong understanding of F&B operations, including food safety, menu development, and customer service.  
    • Excellent commercial acumen with the ability to analyse data and make informed decisions.  
    • Proven ability to influence and collaborate with operational teams to drive results.  
    • Strong problem-solving skills with a focus on delivering practical solutions.  
    • Excellent communication and interpersonal skills, with the ability to engage and motivate teams.  
    • Passion for delivering exceptional customer experiences.


    What do you need?

      • Minimum of 3 years of experience in a senior F&B role within the hospitality, leisure, or gaming industry.
      • Proven track record of driving F&B performance and profitability in a multi-site environment.
      • Experience in menu delivery , cost control, and inventory management.
      • Knowledge of food safety regulations and compliance requirements.
      • Experience in training and developing F&B teams (desirable).

    Qualifications

    Additional Information

    You will be required to travel to all Grosvenor casinos, in the Scottish region - Glasgow, Edinburgh, Dundee and Aberdeen.
